This is a quick and easy Stir And Bake Cake, as it does not require any use of electric mixer, it is very suitable for children who wants to bake, or you can bake this on a busy or a lazy day!
100g plain flour
10g coco powder
1 tsp baking powder
1/2 tsp bicarbonate soda
100g caster sugar
80ml corn oil
130g canned Longan or Lychee (Chopped)
10g desiccated coconut
20g chocolate drops
Sift plain flour, coco powder, baking powder and bi-carb into a bowl
Using a hand whisk and combine eggs, sugar and oil. Use a metal spoon and fold in the flour lightly till combine
Add in the Longan, desiccated coconut and chocolate drop until well blended
Spoon mixture into muffin cups.
Bake in preheated oven at 175 degree C for 20-25 mins
When cool, decorate with fresh whipping cream or butter cream and chopped Longan on top (optional).
