I love Salmon, be it raw or cooked. But my youngest son only like the raw version. I went to pinch some banana leaf from my friend’s place to make Ang Ku Kueh, so I decided to use the left over banana leaf to bake this fish, when my son saw the cooked salmon, he wasn’t impress at all, but when I insisted that he give this a try, he give a πŸ‘πŸ˜…

2 salmon Fillets
1/4 cup finely chopped parsley
1 tbsp Chia seeds
1/2 tsp salt and pepper to taste
1 tsp lemon zest (optional)
1/2 tbsp olive oil

Put all ingredient (except the salmon) in the bowl and mix well
Prepare a baking dish.
Brush the fillet with 1/2 tbsp oil and divide the crust mixture evenly, spread over the top of each and press down gently to secure
Bake in 180 degree oven for about 6-10 mins then uncover and continue baking for 2-3 mins or until cooked to your liking
Sprinkle with salt and pepper, if desired, serve with parsley and lemon wedges.
