Chicken Cordon BleuπŸ“πŸ–πŸ„

Ingredients:
2 pieces chicken breast meat or boneless Maryland, cut each into half
4 slices ham or Prosciutto
4 slices cheese
4 tbsp cornflake crumbs / bread crumbs

Marinade:
1 tsp salt
1/2 tsp pepper

Batter (mixed)
2 tbsp plain flour
2 eggs

Dipping sauce:
4 tbsp mayonnaise
1 tsp lemon juice

Method:
Butterfly the chicken breast and pound with the back of knife. Mix with marinade and marinate for 30 mins.
Place a piece of ham and a piece of cheese in the center of each flattened piece of chicken. Roll up
Spread chicken rolls with batter then coat with bread crumbs
Air fry at 180C till golden brown or pan fry with a little bit of oil till golden
Cut into pieces and serve with dipping sauce, lettuce and cherry tomatoes
