Air Fried Sweet And Sour Pork ζ¦Άι†‹θ‚‰πŸ–πŸ–πŸ–

Ingredients:
300g lean pork (I use pork shoulder)
1/2 large onion
Red and green capsicum
Pineapple pieces (optional)
Potato flour for coating
Coriander leaves to garnish

(A)
1/4 tsp bi-carb
1/4 tbsp corn flour

(B)
1 tbsp soy sauce
1 tsp salt
Dash of pepper

(C)
80g stock or water
4 tbsp each of sugar
4 tbsp ketchup / Gluten Free Ketchup
3 tbsp of vinegar
1 tbsp each of cooking wine
1 tsp salt

(D)
2 tbsp water
1 tbsp tapioca or corn flour

Method:
Cut the pork into cubes, marinade in (A) overnight
Few hours before cooking, add in (B) to marinade
Roll in the potato flour
Air fry at 160 degree C for 15 mins or till golden brown
In a saucepan, add (C) and bring to boil
Mix in the and pork then stir quickly
Thicken with (D)
Garnish with coriander before serving
