This is a simple quick and easy one pot meal which can be done in less than an hour.
1 tsp minced garlic
200g white rice
12 medium size shelled prawns
1 fresh squid cut into rings
1/2 green capsicum
1/2 red capsicum
100g Cannes pineapple, diced
1 tsp salt
1/4 tsp ground black pepper
1/2 tbsp light soy sauce / Gluten Free Soy Sauce
Heat oil, sauté garlic until fragrant, add in the rice and stir fry until aromatic
Pour in the water, cook at low heat until semi cooked, add in the remaining ingredients (except the pineapple), seasoning and mix well
Cover with lid and continue to cook for 15 min or until done, add in the pineapple and stir well.
