Tom Yum Fried Rice

Serve 4
Preparation time: 20 mins
Cooking time: 20 mins

Ingredients:
1 1/2 cup rice
2 eggs – beaten
1 onion – slice
250g chicken breast
A hand full of Parsley or coriander leaves or spring onions

Seasoning to taste:
2 tbsp Instant Tom Yam Soup Paste
1 tbsp sesame oil
1 tsp fish sauce
Dash of black pepper

Garnishing:
Fresh cut chili padi
Fried shallots

Method:
Put the rice in the rice cooker and cook as per normal, when done, leave to cool completely
Chicken breast cut into cubes and marinade with 1/4 tsp salt and dash of pepper (you can replace chicken breast with prawn, squids, beef etc)
Heat oil in a work, fry onions till fragrant, add chicken meat (or seafood) and cook till meat is cooked, dish up to a plate
Heat oil, add in the beaten eggs and fry till eggs almost done, add in the rice and seasoning and fry till well mix and the taste is to your liking
Turn off the heat add in the parsley and mix well
Remove to a serving plate, put the garnishing on top and serve hot.
