Chicken With Special Sauce 🐓🐓🐓 东安子鸡

Do you love vinegar? I do! I cook this dish twice this week because of the sauce that is a little spicy and sour at the same time, both my husband and son says is 👍👍👍☺️
东安子鸡是湖南的传统名菜,据说始于唐代。相传唐玄宗开元年间,湖南东安县城里,有一家由三个老妇女开的小饭馆,某晚来了几个经商客官,当时店里菜已卖完,店主提来两只活鸡,马上宰杀洗净,切块后加上葱、姜、辣椒等佐料,还有盐、酒、醋等调味,此道菜吃得客官非常满意,事后到处宣扬,小店因此声名远播,甚至东安守县县太爷也风闻此事,亲临该店品尝、并为之取名“东安鸡”,流传至今,已有一千多年的历史。

Ingredients:
1 chicken (1.5kg)

材料:
1 只鸡 (1.5kg)

Sauce:
2 tbsp water
2 tbsp black vinegar
1 tbsp sugar
1 tsp salt
1 tbsp shaoxing wine

2 tbsp chopped ginger
3 stalks coriander leaves, chopped
2 red chili, seeded and chopped

汁料年(拌匀):
2 大匙水
2 大匙浙醋
1大匙糖
1小匙盐
1大匙紹兴酒

2大匙姜茸
3 棵芫茜,切粒
2 条红辣椒,去籽,切粒

Method:
Wash chicken and put into a pot of boiling water, when water re boiled, reduce the heat and simmer for 20 mins
Turn off the heat and soak the chicken in the pot for another 20 mins
Dish up and drain and apply some cooking oil on the chicken and leave to cool slightly before cutting into bite size and arrange onto a serving plate
Put sauce ingredient into a mixing bowl, heat up in the microwave for 20 sec till sugar dissolve, add in the chopped ginger, coriander leaves and red chili and mix well
Pour sauce over chicken and serve with hot rice.

做法:
鸡洗净,放入滚水中,小火煮20分钟,熄火浸泡20分钟,捞起沥干水分,涂点油在鸡上,斩块上碟
汁料放入微波炉20秒钟至糖溶化,加入姜茸、芫茜和红辣椒伴均,淋在鸡肉上即可享用
