This is a super easy quick meal to fix, I love the fact that I can “force” my son to eat vegetables by adding them into his rice! And guess what is the response from a boy who don’t really like to eat vegetables? “Mummy, can you make the spinach rice again?” 😅
Serve one person:
1/2 cup rice, washed and drain
1 tbsp olive oil / oil
1/2 Onion, chopped
1/2 tsp each of ground black pepper, salt and chicken stock granules
Spinach, washed and chopped
Ready cooked frozen fish fillet
Heat up oil and sauté onion until fragrant
Add in rice and seasoning and stir well
Transfer to rice cooker and cook as per normal until done
Add in chopped spinach, cover and cook for another 5 mins.
Bake the fish according to instructions
Serve with Tartar sauce, fresh lettuce and cherry tomatoes.
