Someone posted this recipe on facebook few months ago, but I couldn’t find the spice salt in Perth, so I send my husband to look for it in Giant supermarket, he too cannot find it. Finally my good friend Irynn Chia found it at Pasir Ris White Sand NTUC! Thanks Irynn for taking the trouble to look for this spice salt, you make this chicken not only crispy but also very 温馨!Feeling blessed! πŸ˜‡
One whole chicken 1.5kg
Wash and drain dry using colander for an hour in the fridge uncovered

Rub the chicken with 1 1/2 tsp of spice salt and few drops of dark soy sauce

Return to the fridge and leave it uncovered for another hour
Cover with a cling wrap and let it marinate for another 2 hour or overnight
Preheat oven at 200Β°C and bake for 45 mins or until golden brown
Use a brush and brush the chicken with the sauce that is on the drip tray and bake for another 5 mins. Remove and leave to slightly cool before cut into bite size and serve.
