Sherry With Minced Pork And Green Peas

Every time when I cook this dish, it reminds me of Grace and Basil. The first time I ate this dish is at their house in 1997. The use of sherry liquor really make this dish very yummy, I bought a bottle of sherry just to cook this dish!

Ingredients:
250g minced pork
50g frozen green peas
1 1/2 tbsp chopped spring onions
2 tsp minced ginger

Seasoning (A):
1 tsp each sherry, soy sauce, sesame oil
1/2 tbsp plain flour
Dash of pepper

Seasoning (B):
1 tsp sugar
2 tsp oyster sauce
1/4 tsp salt
1 tsp sherry
1 tsp light soy sauce
2 tbsp water

(C)
Corn flour solution

Method:
Marinade pork with A
Heat oil and fry ginger till fragrant
Add in the pork and fry till cooked and change color
Add in the frozen peas and (B)
thicken with (C)
Sprinkle with more sherry if desire.
Stir in the spring onion and serve
