Happy Call Char Siew


Serve: 8

900g collar pork

4 tbsp Hoisin sauce
4 tbsp oyster sauce
1 1/2 tablespoon sesame oil
2 tbsp rice wine / Hua Tiao Chiew
1/2 tsp dark soya sauce
4 tbsp brown sugar
2 tbsp honey
1/2 tablespoon minced garlic / 2 clove of garlic, lightly mash with skin on
100ml water

Slice Cucumber

Cut the meat into thick strips, rinse and drain well.
marinades the pork with the the seasoning and mix well, leave in the fridge for one hour or overnight

Put the meat and the sauce into happy call pan (reserve one bowl of sauce, set aside)

Cook the meat till boil, reduce the heat to low and cook till meat is tender and sauce is thicken, flip the meat every now and then to coat the meat with the thick sauce
roast the meat till the sugar caramelize, flip over and roast the other side

Leave to cool complete before cutting into thin slices

Method For The Sauce:
Strain the sauce to a small saucepan and bring to boil, simmer for a few min then thicken with tapioca flour solution.
