豆酱焖花肉 Braised Pork Belly With Salted Soya Beans

Ingredient:
500g pork belly strips
1 tablespoon oil
1/2 tablespoon chopped garlic
1/2 tablespoon chopped ginger
3 tablespoon salted soya bean
10g black fungus

Seasoning
1 tablespoon oyster sauce
1/4 teaspoon salt
1/4 teaspoon sugar
1/2 teaspoon dark soy sauce
Pork stock (enough to cover the pork belly)

Method:
Clean pork belly and blanch in boiling water for 5-10 mins. Remove the pork belly and reserve the stock
Rinse pork belly with cold water and cut into bite size
Heat up wok, add in cooking oil, saute garlic, ginger and salted soya bean till fragrant
Add in pork belly and fry till well mix
Add in seasoning and black fungus and simmer over medium heat until pork belly is tender.
Dish up and serve hot with rice.

Personal note: I use pressure cooker, when 2nd indicator up, reduce heat and cook for another 10min
