This is a very quick and easy dish to prepare using very simple ingredients. I will cook this dish when I’m lazy to look for dishes to cook, what’s more important is my fussy boy loves it, and he has to eat his vegetables!

350g minced pork
200g potato, cut into cubes, soak in water for 5 min then drain
100g carrot, cut into cubes
100g brown onion (chopped)
Seasoning A :
4 teaspoon light soy sauce
1/2 teaspoon dark soy sauce
1 teaspoon sugar
3 teaspoon cornflour
1/4 teaspoon white pepper
Seasoning B: mix well in a bowl
1 tablespoon oyster sauce
1/2 teaspoon sugar
1/4 teaspoon Salt
Dash of pepper
1 teaspoon sesame oil
Marinade mince pork in seasoning A for at least half an hour
Heat up pan with oil over medium-high heat and stir fry potato until cooked and lightly golden brown. Dish up and set aside.
Heat up pan again with oil over medium heat. Add onion and sauté until fragrant, add in the pork and spread it out. Do not stir. Let it cook till slightly caramelized. Flip it over and let the other side cook for a while.
Reduce the heat to low and stir up the pork into tiny bits. Add in the potato and carrot and fry until well mix.
Add in seasoning B and mix well, Dover and let it simmer till potato and carrot are tender, stir occasionally, add more water if needed if the sauce runs dry before the potato and carrot turn tender
When the potato and carrot are almost tender, open the lid and stir until the sauce runs dry. (If you prefer to have suace on this dish, omit this step)
Season with sesame oil and pepper. Serve well with rice and congee.
