Roasted Lemon Chicken (Whole) 香烧柠檬烤鸡Oven or Buffalo Air Fryer Method

  Ingredients:
1 whole chicken about 1.2kg to 1.5kg

1 tablespoon butter, cut into small pieces

3 pips garlic, sliced

2 lemons, pricked holes 
Marinade:

1 1/2 teaspoon salt

1/2 teaspoon pepper
Glazing (mix well in a bowl):

1 teaspoon light soy sauce 

1 tablespoon olive oil

1 tablespoon honey

Gravy (mix well in a bowl)

1 tablespoon Worcestershire sauce

2 tablespoon honey 

1/2 tablespoon corn flour 

Method:

Wash the chicken and drain well
Rub marinade all over the whole chicken, both inside and outside well
Cover the chicken with glad wrap and leave it the fridge to marinate overnight.
Remove the glad wrap the next day and leave it in the fridge for 2 hours to dry out the skin (turn the chicken upside down after an hour to dry out the other side)

Place butter and garlic under the skin and insert lemon into chicken cavity and seal the edge by using a bamboo skewer

Oven Method:

Place the chicken with a roasting pan lined with aluminum foil.
Preheat oven at 180°C and bake for 40mins
Remove the lemons from the cavity of chicken, reserve the lemons
brush honey glaze all over the chicken and return to the oven to roast until golden brown. Remove and leave to slightly cool before cut into bite size
Squeeze out the lemon juice into a small saucepan and bring to boil with the gravy ingredients 
Serve the chicken with gravy.
Buffalo Air Fryer Method:

Insert the fork into the middle of the chicken and secure both sides to the chicken fork.
Place the secured chicken fork into the air fryer and close the lid
Set the timer and select roast mode/ roll mode / 170°C / 1 hour

Remove the lemons from the cavity of chicken, reserve the lemons
brush honey glaze all over the chicken and return to the oven to roast until golden brown. Remove and leave to slightly cool before cut into bite size

Brush the honey glaze on the chicken 5 mins before it is ready then continue roasting until time is up. (Note: set your own timer to 55 min and when time up brush with honey glaze, the fork will turn by itself for you to brush the honey glaze)
Squeeze out the lemon juice into a small saucepan and bring to boil with the gravy ingredients
Serve the chicken with gravy.
