Ingredients
Serves about 6-8 people

Frozen Pampas Sweet Pie Base:
Cook the Pampas Sweet Pie Base according to instruction.

Ingredients for Pastry Cream:
1 1/4 cups milk
1 tsp vanilla extract
3 large egg yolks
1/4 cup white sugar
2 tbsp plain flour
2 tbsp corn flour
1/2 tbsp liqueur (Grand Marnier, Brandy, Kirsch) (optional)

Ingredients for Apricot Glaze: (optional)
1/4 cup apricot jam or preserves
1/2 tablespoon water

Ingredients for Topping:
fruit (raspberries, blackberries, strawberries, blueberries, kiwifruit, bananas, plums, pineapple, melon, etc.) OR
A small canned sliced peach, drain well

Method for Pastry Cream:
In a medium-sized heatproof bowl, mix the sugar and egg yolks together. (Don’t let the mixture sit too long or you will get pieces of egg forming.)
Sift the flour and cornstarch (corn flour) together and then add to the egg mixture, mixing until you get a smooth paste.
Meanwhile, in a saucepan bring the milk just to boiling (just until milk starts to foam up.)
Remove from heat and add slowly to egg mixture, whisking constantly to prevent curdling. (If you get a few pieces of egg (curdling) in the mixture, pour through a strainer.)
Then pour the egg mixture back to the saucepan and cook over medium heat until slightly thicken (like mayo) whisking constantly. Remove from heat and immediately whisk in the liqueur (if using). (Stir in vanilla extract) Pour into a clean bowl and immediately cover the surface with plastic wrap to prevent a crust from forming. Cool to room temperature. If not using right away refrigerate until needed, up to 3 days. Beat or whisk before using to get rid of any lumps that may have formed.

Method for Apricot Glaze:
Heat the apricot jam or preserves and water in Can microwave for 20 sec. strain the jam through a fine strainer to remove any fruit lumps.

To Assemble Tart: To remove the tart from the fluted sides of the pan, place your hand under the pan, touching only the removable bottom not the sides. Gently push the tart straight up, away from the sides. The fluted tart ring will fall away and slide down your arm. If you want to remove the bottom of the pan, run a knife or thin metal spatula between the crust and metal bottom, then slide the tart onto your platter.
Spread a thin layer of apricot glaze over the bottom and sides of the baked tart shell to prevent the crust from getting soggy. Let the glaze dry (about 20 minutes). Then spread the pastry cream onto the bottom of the tart shell. Place fruit randomly on top of cream or in concentric overlapping circles, starting at the outside edge. After arranging the fruit, rewarm the glaze, if using, and gently brush a light coat on the fruit. If not serving immediately, refrigerate but bring to room temperature before serving. This fruit tart is best eaten the same day as it is assembled. Cover and refrigerate any leftovers.

Ingredients:
2 tablespoon olive oil
500g rump steak, diced
2 medium brown onion, finely diced
150g button mushroom, thickly sliced
1 tablespoon fresh rosemary leaves
2 tablespoon tomato paste
1 tablespoon plain flour
2 1/2 cup Campbell real beef stock
1/2 teaspoon Salt and dash of black pepper
1/4 cup fresh flat leaf parsley, chopped
1 cup frozen peas
Pampas puff pastry

Method:
1. Heat oil in a wok over medium heat, add the steak and cook for 4-5 min until browned

2. Add onion and cook for 2-3 min, stirring often until soft

3. Add mushroom, rosemary, tomato paste and flour, stir to combine and cook for a further 2 min

4. Add beef stock and bring to the boil

5. Season with salt and pepper, reduce heat and sinner for 1 hour or until beef is tender and liquid is reduced.

6. Stir through parsley and peas and allow to cool completely

7. Heat up pie maker, and make pie accordingly.

APPLE CRUMBLE ๐ŸŽ๐ŸŽ๐ŸŽ (Thermomix)

(Crumble is of British origin and is an easy warm dessert)

Serve 6
Prep time 10 mins
Total time 45 mins

Ingredients for Crumble:
150g plain flour
100g butter cut into pieces + some extra
80g sugar
1/8 tsp salt

Ingredients for Filling
600g apples, peeled, cored, cut into quarters
1 tbsp lemon juice
40g sugar
1 tsp cinnamon

Method:

Crumble:
Place all crumble ingredients into Thermomix Mixing bowl, mix 10 sec/speed 6. Transfer into a bowl and set aside.

Filling:
Place all filling ingredients into Thermomix mixing bowl, chop 2 sec/speed 4 and heat 5 mins/100 degree C/ reverse/speed 1.

Preheat oven to 180 degree C
Place filling into a buttered rectangle baking dish.
Scatter crumbles on top of apple mixture and bake in the oven for 25-30 mins until golden brown. Serve warm.

Tips:
Enjoy apple crumble with whipped cream, vanilla sauce, or a scoops of ice cream.
When entertaining guests, prepare crumble in advance and bake while serving the main course.
You can double this recipe, just cook the apple mixture 3 mins longer and use a bigger casserole dish.

Variation:
Crumble: replace up to 50g flour with ground almonds or other nuts
Be creative with your filling, instead of apples and cinnamon you can use other fruits (e.g. Peach, rhubarb, blackberry, gooseberry, plum) and other spices (e.g. Vanilla, rosemary, sage, thyme). Some fruits need no chopping.

Ingredients:
3 eggs – beat well in a bowl
1/2 onion – chopped
1/2 tomato – chopped
1 bacon – cut small
3/4 cup chopped broccoli
1/4 cup grated cheese
Dash of salt and pepper or to taste
5 pieces of bread – cut out the rounds and the butter it on both sides

Method:
Mix all the ingredients (except the bread) in a bowl and mix well
Warm up the pie maker
Put batter into the pie maker to the brim
Cover with the bread
Cook till brown

Pampers puff pastry

Filling:
2 tbsp oil
100g mixed vegetables
100ml water
1 big onion, diced
300g chicken breast, diced
1 can button mushroom, diced
250g potato, diced

Seasoning:
2 tsp salt or to taste
2 tsp sugar
1/4 tsp pepper

1 1/2 tbsp corn starch mix with 1 1/2 tbsp water for thickening

Method:
Heat up oil and fry the onion until soft
Add chicken meat, mixed vegetables and mushroom and fry for a while
Add In water, potato and seasoning and simmer till potato is soft
Thicken with cornstarch, leave to cool
