Banana Chocolate Chip Shortbread🍌🍌🍫🍫🍞🍞

“Mum, do you know how to make banana bread? I’m paying A$4 per slice everyday at the cafe.” So, mum to the rescue! When I first bake this last week, it was gone before I could take a picture, so today, I decided to bake it when nobody is home.  What do I get in return? A hug! πŸ˜‚πŸ˜‚

You will need:

Rectangle loaf tin line with baking paper 

Electric mixer 
Ingredients:

(A) – put into the mixer bowl 

250g sugar

130g butter

1 teaspoon sodium bicarbonate 

1/2 teaspoon salt
(B)

2 eggs, lightly beaten 
(C)

300g over ripe banana, mashed with a fork
(D) – sifted together 

300g plain flour

1/2 teaspoon baking powder
(E)

80ml fresh milk

1 teaspoon vanilla essence
(F)

100g chopped nuts of your choice 

50g chocolate chips
Extra nuts and chocolate chip to sprinkle on to top (optional)


Direction

1. Pre heat oven at 180Β°C

2. Using the K-beater, increase speed from 0 to 6 gradually and cream till light and fluffy


3. Slowly add in (B) from the side of the mixing bowl and cream till smooth


4. Reduce speed to minimum and add in (C) and mix till well blend


5. Add in (D) and (E), slowly increase the speed back to 6 and mix till well combined


6. Add (F) and mix till well incorporated


7. Pour into the baking loaf tin, sprinkle extra nuts and chocolate chip on top if desire 


8. Bake at 180Β°C for 45 min or till golden brown

9. Remove to a cooling rack and leave till coo. Slice and serve.

Chocolate Banana CakeπŸ«πŸŒπŸŽ‚

Ingredients:
(A)
100g brown sugar
200g oil
3 eggs
1/2 cup bittersweet Choc chips
76g fresh milk
1 teaspoon vanilla essence
300g over ripe banana – mash with a fork
60g Walnut – chopped

(B) sift together
166g self raising flour
1 1/3 teaspoon baking powder
1/2 teaspoon baking soda
1 1/3 teaspoon ground cinnamon
1/2 teaspoon salt
80g coco powder

Method:
1. Preheat oven to 175Β°C
2. Line an 8 inch square pan with baking paper
3. Using a electric mixer and beat oil and sugar for about one min

4. Reduce speed to min, then add eggs one at a time, turn up the speed and beat till combine

5. reduce speed to min, then fold in the flour till thick
6. Use a spatular fold in the milk
7. Lastly, fold in the banana,1/2 portion of the Choc chip and walnut, do not over mix

8. Pour into the baking tin and top with the remaining walnut and Choc chips

9. bake in oven (150C) for about 1 Β½ hrs, stand for 5 mins before turning onto wire rack, remove the cake from the mould and let it cool

BASIC BANANA CAKE🍌🍌🍌🍌🍌🍌

INGREDIENTS:
4​​​​​​ over ripe bananas – mash
180g​​​​​​ butter – soften
180g​​​​​​ caster sugar​
2 ​​​​​Eggs – room temperature
1 tbsp​​​​​​ fresh milk

(A) – SIFT TOGETHER
240g Plain flour​​​​​
1 tsp Baking Powder​​​​
1/2 tsp Bi-carb soda (baking soda)​​​
1/2 tsp salt

METHOD:
Preheat oven at 150C
grease deep 23cm square cake pan, line base with baking paper (if use silicon baking tray just brush with melted butter)
beat butter and sugar using K-beater, slowly increase the speed to 6 and beat till pale (about 7 mins)
Add in the milk
Lightly beat one egg into a bowl, reduce speed to min, then add the egg slowly by the side, repeat for,the other egg, turn up the speed and beat till combine
reduce speed to min, then fold in the flour till thick
Lastly fold in the banana
bake in oven (150C) for about 1 Β½ hrs, stand for 5 mins before turning onto wire rack, remove the cake from the mould and let it cool

Variation:
Marble: scope out a small portion of batter, add in coco powder or melted chocolate and mix well
Chocolate banana cake: add in 1 to 2 tbsp of cocoa powder into the (A) – depending on your liking.
