铁板豆腐 Sizzling Tofu With Minced Pork

  

This is one of my youngest son’s favorite dish, if we do eat out in a Chinese Resturant he will definitely order this dish.  You can add any topping you like beside minced pork, so today, I just cook a simple and non spicy version of this dish as my eldest son don’t really like spicy food.  I had trial and error this recipe for many many times and finally this one get a thumb up from my fussy little boss! 

Line kitchen paper towel on a plate

Prepare the hot plate 

Ingredients
:

2 large tube egg tofu (230g tube)

30g Tapioca flour for coating 

2 cup oil for deep frying

1 teaspoon minced garlic 

3 large eggs

250g minced pork

Chopped spring onion or coriander for garnishing 

  

Seasoning
:

200g water

2 tablespoon oyster sauce

1/2 teaspoon salt

1/8 teaspoon dark soy sauce

Dash of pepper

Thickening
:

1 tablespoon tapioca flour mix well with 1 tablespoon water

Method:

1. Heat a non stick wok / saucepan with oil
2. Cut the tofu into bite size

  
3. When the oil is hot, coat the tofu with tapioca flour one at a time and put into the wok and pan fry tofu till golden brown on both side

  
4. dish up and drain on plate, discard the oil

  
5. Heat 1 tablespoon oil and fry the garlic till fragrant 

  
6. Add in the minced pork and fry till cooked

  
7. Add in the oyster sauce, salt, pepper and water and fry well
8. Thicken with tapioca starch water, dish up to a bowl and set aside

  
9. Beat the eggs with 1/4 teaspoon light soy sauce
10. Heat the hot plate with enough oil

  
11. Pour in the beaten egg evenly

  
12. When the egg is almost set, arrange the tofu onto the eggs and continue to cook till egg is cook

  
13. Pour the minced pork over the egg and remove from heat

  
14. Garnish with chopped spring onion and serve immediately with rice

Spicy Ma Po Tofu 四川麻婆豆腐

This is a family favorite dish, my son will tend to eat more rice whenever I cook this dish, it is very appetizing when serve with hot rice!
Ingredients:
500g (2 packet) Egg tofu
200g minced pork
1 tsp minced ginger
100g Water
3 tbsp / or to taste Lee Kum Kee brand Chili Bean Sauce (Toban Djan)
1 tbsp oil
2 tbsp cooking wine
1/2 tsp / or to taste light soya sauce
Corn flour mix with water

Method:
1. In a non stick pot, heat oil, fry ginger till fragrant
2. Add in minced pork and fry till color change
3. Add in the chili bean sauce and fry awhile
4. Add in water and bring it to boil
5. Add in the tofu, cooking wine, soy sauce and let it simmer till cooked
6. Thicken with corn flour mixture
7. Add in spring onion and mix well, dish up
