Bacon and BBQ Chicken Pizza

Dough:

375g bread flour (I use Lighthouse Bread & Pizza Plain Flour)

3 tsp instant yeast (I use Lighthouse Yeast + Bread Improver)

1 1/2 tsp caster sugar

1 1/2 tsp salt

240g fresh milk (+/-)

40g olive oil

Rectangular baking tray (I use 12 x 14 inch ), line with baking paper and spray a thin layer of oil all over

Toppings:

BBQ sauce (I use Leggo’s Pizza Sauce)

50g mushroom, slice thinly

100g Bacon, cut into stripes

150g Boneless and skinless chicken thigh, cut into small cubes

Fresh Basil leaves / spinach

Thermomix Method:

1. Put flour, yeast, sugar and salt into the TM bowl, mix 10 sec / speed speed 2

2. Add in the milk and oil, 10 min / knead function and knead till gluten is fully developed, i.e. Elastic, smooth, non-sticky and pull away from sides of mixing bowl. Stretch a piece of dough for testing. This dough should form a thin membrane before it breaks

3. Leave the measuring cup on and leave to proof till double in size (about 30 min, depending on the weather)

Stand mixer Method:

1. Put flour, yeast, sugar and salt into the mixing bowl with the dough hook and and mix well

2. Slowly add in the water and beat into a dough

3. Add in butter and knead till the dough is elastic and smooth

4. Rest dough and leave to proof till double in size (about 30 min depending on the weather)

Pizza base:

1. Pre-heat over at 200°C

2. Place to dough on a clean work top. Punch the dough down to release gases produced in the proving process. After punch down, do not knead the dough.

3. roll out the dough into the baking tray. Prick holes with fork.

4. Bake for 10 min or until lightly golden brown. Removed from oven and leave to cool.

5. Spread BBQ sauce onto the crust

6. Spread some cheese all over

7. Place the topping of your choice like, mushroom, bacon, chicken, olives and more cheese on top.

8. Bake in a preheated oven at 200C for 10 min or till chicken is cooked

9. Remove from oven and spread the fresh basil leaves on top a little more cheese

10. Bake for another 2 min or until cheese is lightly melt and golden brown

Garlic Prawn Fat Head Pizza 🍕🍕🍕🍕🍕 (Ketogenic diet, Low Carbs, Gluten Free)

This is a Ketogenic Diet friendly pizza base as each slice of pizza is only 1.8g of carbs. For pizza, my favorite topping is garlic prawn.  I seldom order pizza for myself as it usually requires me to pay extra for gluten free base and extra for prawns range.  This pizza base is so easy to make and literally you can have a pizza in under 30mins!  As for taste wise, even my son who dislike “healthy eating” says is yummy, but the down side is, the base is not crispy compare to normal pizza. Well, I guess I can’t complaint since I’m on a diet and still can eat pizza isn’t it? 

Serving size: 8 pieces 
Ingredient for the base:

170g shredded mozzarella cheese

56g cream cheese

1 large egg, lightly beaten

½ tsp salt

85g almond flour
Ingredient for Topping:

5g minced garlic

40g concentrated tomato paste

80g grated mozzarella cheese

200g prawns

20g Spinach

20g mayonnaise- for drizzling 
Direction

Pre heat oven at 220°C
Line the baking dish with baking paper and apply 1 teaspoon oil on the paper 


Place the shredded mozzarella cheese and cream cheese into a microwave safe bowl and microwave on high for 1 minute. Mix with a spatula and microwave on high for another 30 seconds. Mix well 


Add in the egg, salt and almond flour. Put on the disposable food safe gloves and knead till we’ll combine 


Place the dough on the baking dish and flatten into round (I use the ring of a cake tin to help me get the shape)


Dock the dough with a fork, remove the ring and bake for 10 minutes.



When 10 min is up, Remove the pizza base from the oven 


Put the minced garlic and tomato paste in a bowl and mix well

spread the tomato paste on top the pizza base

Spread 60g of the grated mozzarella cheese on top


follow by the spinach and prawns, lastly sprinkle the balance of the 20g of mozzarella cheese on top


Return to oven and bake for 5 mins. 


Drizzle mayonnaise on top. Slice and serve hot or cold

Stuffed Crust Sausage Pizza🍕🍕🍕🍕🍕

You don’t have to pay extra for the stuff crust pizza anymore when you can do it yourself!

Leave the measuring cup on and leave to proof till double in size (about min 30 depending on the weather)

Put flour, yeast, sugar and salt into the mixing bowl with the dough hook and and mix well

Pizza base:
On a floured work top, divide the dough into 2 portions
Flatten the dough and roll into round
Place onto a greased pizza pan (I use pie dish) and let dough drape about 3 cm over the edges
Spray some water to the edges and place cocktail Frankfurt sausage and mozzarella cheese around edges of pan
Fold and pinch to seal
Spread tomato purée (I use Leggo’s Pizza Sauce) over crust
Place the topping of your choice (mushroom, capsicum, onions, olives, pineapple etc) and cheese on top
Bake in a preheated oven at 200C for 20 min or until cooked and cheese is lightly brown

Pepperoni Thin Crust Pizza

My son love pizza. I usually buy pizza from the shop which usually cost about A$10 for a large pizza or buy frozen pizza from supermarket for A$3 from Coles. I understand that pizza can cost about S$20 in Singapore?? So why don’t make it yourself with these simple ingredients, as for topping, you can put anything you like, chicken, seafood, beef, lamb, ham, bacon, squid, pineapple etc, etc!!

Spread tomato purée (I use Leggo’s Pizza Sauce) over crust
Place the pepperoni and cheese on top
Bake in a preheated oven at 200C for 12 min or until cooked and cheese is lightly brown
