Bake Chicken With Almond Rice


Ingredients for the Chicken:

4 chicken Maryland
1 tablespoon olive oil


1 tablespoon chopped garlic 

1 1/2 teaspoon dried rosemary 

1 teaspoon paprika 

1/2 teaspoon ground black pepper 

Method for the chicken:

Combine chicken with seasoning and marinate for at least 4 hours
Line a baking tray with aluminum foil
Arrange the chicken on the tray

Sprinkle oil all over the chicken 

Bake in pre heated over at 220°C for 30-35 min or until cooked

Ingredient for Almond Rice:

250g rice, washes and drained well

1 tablespoon oil

1 tablespoons chopped garlic 

1 teaspoon Salt 

1/8 teaspoon pepper or to taste 

30g toasted almond

1 tablespoon raisins


Heat up oil and sauté the garlic till fragrant 

Add in the rice, salt and pepper and fry till well mixed 

Transfer to rice cooker and add water as per normal and cook till rice is cooked

Just before serving, add in the almond and raisins and mix well


Stewed Chicken With Celery And Carrot Rice🐓🐓🐓


Stew Chicken:

2 boneless chicken Maryland, cut into pieces
3 tablespoon oil
1 onion, peeled and cut into pieces
2 potatoes, peeled and cut into pieces
1 red capsicum, cut into pieces
1 green capsicum, cut into pieces

1 tablespoon plain flour
1 tablespoon oyster sauce
1/8 teaspoon pepper

1 teaspoon sugar
1/2 teaspoon ground black pepper
1/2 teaspoon salt

Mix chicken with marinade and marinade for 30 mins
Heat oil, pan fry chicken until golden brown
Add in onion and stir fry until fragrant
Add in the remaining ingredients, seasoning and simmer for 30 min or until potato is soft.

Celery And Carrot Rice:
1 tablespoon butter
1teaspoon minced garlic
1 stalk celery, trimmed and diced
1/2 carrot, peeled s d diced
200g rice, wash and drained

1/2 teaspoon salt
Dash of pepper
350ml water

Melt butter in a pan, add garlic and fry till fragrant
Add in carrot, celery, rice and stir fry till well
Add seasoning and stir well
Transfer to rice cooker and cook until done.

Spinach Rice With Bake Fish

This is a super easy quick meal to fix, I love the fact that I can “force” my son to eat vegetables by adding them into his rice! And guess what is the response from a boy who don’t really like to eat vegetables? “Mummy, can you make the spinach rice again?” 😅

Serve one person:
1/2 cup rice, washed and drain
1 tbsp olive oil / oil
1/2 Onion, chopped
1/2 tsp each of ground black pepper, salt and chicken stock granules
Spinach, washed and chopped
Ready cooked frozen fish fillet

Heat up oil and sauté onion until fragrant
Add in rice and seasoning and stir well
Transfer to rice cooker and cook as per normal until done
Add in chopped spinach, cover and cook for another 5 mins.
Bake the fish according to instructions
Serve with Tartar sauce, fresh lettuce and cherry tomatoes.

Roasted Butter Chicken With Almond Rice 香烤奶油鸡🐔🍗配杏仁饭


Ingredients for the roasted butter chicken:
2 chicken whole legs
2 tbsp butter

1 tsp salt
1/2 tsp five spice powder
1 tsp corn flour

Mix chicken with marinade and marinate for overnight
Roast chicken in a pre-heated oven at 220°C for 20 mins (or Air Fried at 180°C )
Remove and brush butter evenly over the chicken whole legs
Return to oven and roast for another 20 mins or until golden brown
Remove and brush butter again.
Cut into pieces and serve hot

Sprinkle toasted almond flakes and raisins on top of rice just before serving.
